Growing Season: Willow Springs is located in the High Desert AVA of the Antelope Valley. Average temperatures range between 63 and 84F over the course of the growing season.
Winemaking: Gorgeous, pristine clusters of Tempranillo were hand-picked at 21 Brix on August 15. The fruit was hand-sorted, destemmed, and gently crushed. Acidity and SO2 additions were made to the must. The juice soaked on the skins overnight and pressed into cold stainless the following day. The juice was racked off the sediment at 24 hours, domesticated yeast added, and slowly fermented to dryness over several weeks. Grenache and Syrah saignee was later blended and the wine was cold stabilized and bottled on April 1st.
Tasting Notes: The wine is a gorgeous rose gold color in the glass and is aromatically intense with alternating aromas of peaches and strawberries and cream. It has a medium body with notes of honeydew melon,watermelon, citrus, and tiny hint of chipotle pepper in the background. This rosé is meant to be drunk chilled.
